To make Thai Shrub: 2 cups rice wine vinegar, 2 cups shredded coconut, 1/4 cup chopped ginger, 1 chopped lemongrass, 1 thinly sliced jalapeno. Put all ingredients in a glass jar, combine and seal for 5 days, shaking once a day. Strain all ingredients. Add 1 1/2 cups of sugar and bring to boil, then simmer for 5 minutes and cool.
To make the cocktail: Combine all ingredients in a shaker, add ice & shake well. Serve on the rocks in a tall glass.
