 2 oz Yuzu Infused Charbay Clear Vodka
 1 oz Lemon Juice
 2 oz Strawberry Simple Syrup
 ½ oz Génépy
 ½ oz Soda Water
 1 Sprig of Thyme

To make yuzu infused vodka: Ingredients - 10-14 yuzu, 3 cups Charbay Clear Vodka, 1 3/4 cups sugar. Peel yuzu and remove pith (to reduce bitterness). Muddle yuzu in a clean jar. Pour in Charbay Clear Vodka and sugar and shake. Leave to infuse for 14 days in a cool, dark place, shaking every day. Once reached desired flavor profile, strain infused vodka into a clean bottle or jar. Seal and store in a cool, dark spot.

To make strawberry simple syrup: Ingredients - 1 cup water, 1 cup sugar, 1 cup chopped fresh strawberries. In a small saucepan boil water, add sugar and stir until dissolved. Lower heat to a simmer and add in strawberries. Simmer this mixture for about 20 minutes, until the strawberries have softened. Strain into a clean jar and let cool before putting on lid. Store in the fridge.

In a cocktail shaker with ice, mix all ingredients except the soda water.

Once shaken, strain into a tall glass with ice. Top with the splash of soda water.

Garnish with a lemon wheel and the sprig of thyme.
