NEW WHISKEYS TO TRY RIGHT NOW
CHARBAY DOUBLED & TWISTED AMERICAN WHISKEY
Think of this as a craft whiskey for beer lovers. Half of the blend is a three-year-old straight malt whiskey, and the remaining half is distilled stout whiskey and pilsner whiskey. It’s bold, plush and wild, with hops and dark stout-like cocoa notes fading into a clove-accented finish. Made in California.

The distillery, based in Ukiah, California, part of Mendocino County, says it will spotlight one of its whiskey bottlings to benefit victims of recent California wildfires. Charbay will release a specially labeled bottle of its current R5 whiskey, distilled from Racer 5 IPA by brewery Bear Republic, and has already committed to donate $10,000 to Stand for Kindness, a nonprofit vehicle for relief donations. Jenni Karakasevic, Charbay’s director of operations and owner, holds the same titles at Stand for Kindness.

ESQUIRE MAGAZINE#1 Whiskey in California 2019!
One of the most advanced micro-distilleries in the game is this Napa Valley outfit started by a European expat who wanted to make grape brandy. Today, Charbay produces wine, tequila, vodka, rum, walnut liqueur, and some of the more interesting whiskeys in the world. Thirteenth-generation master distiller Marko Karakasevic is a mad man (and a truly fun dude to drink with), and he should probably be credited with inventing hoppy whiskey; he first distilled an IPA in 1999. By now he has refined his technique, and products like the hoppy Whiskey R5 and Whiskey S (distilled from Bear Republic Brewing's Big Bear Stout) aren't just unique, they are delicious.

Charbay No. 89 ($240, 46%; Charbay, Ukiah): This brandy was alembic pot-distilled in January 1989 from 74 percent Pinot Noir and 26 percent Sauvignon Blanc, then aged in French Limousin oak barrels for 24 years. Bottled at barrel strength, it showcases what is possible to achieve with a lot of patience: floral vanilla and tannic oak flavors bookend cinnamon, apple skin and a fresh-apple sweetness that stays with you long after the last sip.
The Grand Tasting & Culinary Competition challenged culinary experts in six food and beverage categories, awarding one gold, silver and bronze recipient for each.

Monstrously rich and pure, changing from gently sweet to dry and tingly. This stuff is pure excitement at comparatively bargain pricing—big all over, deliciously agave-forward, and particularly hard to beat for its liter-size bottling.

Distilled from Pilsner beer and aged for 13 years, this deep amber whiskey has a concentrated cocoa-hazelnut-caramel aroma, with an undercurrent of hops. The same flavors are echoed on the palate, although the hops are even more pronounced. It finishes long, complex and fiery, with pops of cinnamon, sarsaparilla, orange peel and clove, and a slight beer-like effervescence.

The bouquet features ripe fruit, pulp, red pepper and rind. The palate entry is acidic, astringent, and tart; the midpalate highlights the peppery, zesty side of pomegranate. Finishes more tart than ripe; more biting and sap-like than juicy.
